Kathy's Skillet Cabbage Casserole


A complete dinner in a skillet. Easy and tasty.




1 1/2 lbs. lean ground beef
1/2 cup chopped onion
4 cups finely chopped cabbage
1 cup rice
1 cup water

1 small can tomato sauce
1 small can Rotel tomatoes
1/4 cup chopped bell pepper
1/4 cup chopped celery
1 Tabl. parsley flakes

Directions
1 Cook ground beef and onions. Drain off fat.
2 Add cabbage and cook until wilted, stirring occasionally
3 Add remaining ingredients: rice, water, tomato sauce, Rotel, bell pepper, celery and parsley.
4 Bring to a boil
5 Reduce heat and cover.
6 Simmer until rice is cooked
