Kathy's Meringue Clouds

These cookies can be stored in an airtight container for up to 1 month,
BUT, you will eat them all the first day!  

3 egg whites

1 teaspoon vanilla extract
(OR your favorite flavoring)

1/4 teaspoon cream of tarter

1 pinch

1 cup white sugar

Cover cookie sheet with parchment paper or foil. Set oven to 270 degrees.
1In small bowl, beat egg whites, vanilla, cream of tarter, and salt untill soft peak forms.
2 Very gradually add sugar, beat until very stiff peaks form.
3 Drop mixture by teaspoon full onto baking sheet, spacing one inch apart and bake for 1 hour.
4 Immediately move to rack to cool. Remove from pan when completely cooled and store in air tight container.
