Kathy's Shrimp Cecilion

Great shrimp appetizer that can be prepared ahead of time, refrigerated and later reheated.
Terrific with garlic bread or fresh dinner rolls.

   
I bring this dish to our family Christmas gathering every year.

2 pounds medium shrimp, peeled and deveined
(fresh shrimp; wash and drain well)
1 medium onion
1 bell pepper
1/4 cup celery
1 stick butter

1 tsp fennel
red and black pepper to taste
salt to taste
2 tsp. oregano
1 tsp. basil
1 bottle Italian dressing

Directions
1Coarsely chop and saute' onion, bell pepper and celery in butter.
2 Add fennel, pepper, salt, oregano, basil, and Italian dressing.
3 Bring mixture to a light boil
4 Add shrimp.
5 Bring to a boil. Cook until shrimp are done (about 10 minutes).
6 Cool to room temperature
7 Heat when ready to serve.
